There is this bug that makes your horse disappear forever if you log off when you are riding it.  I lost 2 horses from this because my game crashed (thats my pc's fault), but I don't know if the server meant to do that or if it's a bug. If this was supposed to happen, sorry that I didn't know xD

You've encountered the famous HorseBGone bug, when you log off while riding a horse it sadly disappears. Unfortunately there is nothing we can do about it. This may be fixed in the future but I'm not sure. Sorry

Hello, DancingTomatoes! Unfortunately, this happens to be a well-known Minecraft glitch. When you log off while riding it, it will despawn. I'm sorry this has happened to you. Luckily, there are plenty of ways to get horses, though I do understand the disappointment of losing something you earned. Thank you for taking the time to read this, and I hope this helped!

I'll just make sure not to use my horse if I don't need to XD
But my pc is in the shop right now, and hopefully they can fix it from getting too overheated. Thanks again!
